It is always amusing to read, after the battle, the debriefing on the wine-making process in professional magazines which explain that theirs is the right way to make into wine. It’s like a race for “clout” where some people harvest as late as possible to be able to say that they were the ones who harvested last. This is a strange attitude, especially when you see that the last grapes harvested had a very short fermentation in the vats and went into the drawing off process very early [..]
