Many are those who entertain a rather negative idea of Cahors wines, which they sometimes find unrefined or astringent.
To my mind, there are several fundamental differences between a standard Cahors and the wines we produce at Lagrézette.
In a vast majority of estates, the grapes are harvested too early, in September, when they have not yet reached full maturity, as the wine growers are often afraid to take too great a risk in case of a turn in the weather.
At Lagrézette, Michel Rolland encouraged us, as soon as we began working together, to wait at least three weeks more. The risk is greater, but the reward is at that price. We therefore harvest the grapes early in October. I remember that in the early years our neighbors had finished making their wines… whereas at Lagrézette the vintage had not even begun [..]
